A LOVING, LASTING TRIBUTE...
Last October 20, 2016, as children were anxiously anticipating Halloween and lots of trick-or-treating, a beautiful, young family of six perished in the night, as their rural home went up in flames. Four little girls, Elli, Adilynn, Emma, ages 11, 7 and 5, were students at Conestoga Elementary and had many friends, in and around the surrounding area, as did their baby sister, Anniston, 2, and their parents, Mike and Michelle Speer.
In honor of her family, JoLynne Lehan, Mike's mom, has directed that donations go to Conestoga's outdoor classroom, Cougar Hollow. With the four little girls' love of performing, playing and being out-of-doors exploring nature, in mind, the new additions for this special area will include a pavilion for outdoor instruments, a chalkboard and chairs. A memorial fountain will be added at a later date.
A brick walking path will direct visitors to this special area. If you would like to honor this family with a loving tribute, you may purchase a memorial brick paver for $75. You may add any name to be engraved on the brick. There is space for 3 rows, with each row including a total of 14 characters, (including spaces). The clock is ticking...you need to order soon. MIKE & MICHELLE SPEER FAMILY PERFORMANCE AREA
Conestoga Elementary PTO is pleased to announce a very special addition to our nationally-recognized outdoor classroom, Cougar Hollow.
The Mike and Michelle Speer Foundation has made a generous donation, matched kindly by Mike and Michelle’s employer, Union Pacific, to build a performance area at their children’s school, in Murray, NE.
This is an opportunity to the community to purchase a brick paver in memory of our friends, Elli, Adilynn, Emma and Anniston whose lives, and those of their parents, Mike and Michelle, were tragically lost, when their home was destroyed by fire in October of 2016. Each brick paver will lead visitors to the area designed to honor the Speer family’s love of nature, performance and play, as well as to provide a covered space for quiet time and reflection.

Recipe of the week...
Perfect Rhubarb Pie Recipe

TOTAL TIME: Prep: 20 min. + standing Bake: 55 min. YIELD:8 servings
Ingredients
- 4 cups sliced fresh or frozen rhubarb, thawed
- 4 cups boiling water
- 1-1/2 cups sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon quick-cooking tapioca
- 1 large egg
- 2 teaspoons cold water
- Pastry for double-crust pie (9 inches)
- 1 tablespoon butter
Directions
- 1. Place rhubarb in a colander; pour boiling water over rhubarb and allow to drain. In a large bowl, mix sugar, flour and tapioca. Add drained rhubarb; toss to coat. Let stand 15 minutes. In a small bowl, whisk egg and cold water; stir into rhubarb mixture.
- 2. Preheat oven to 400°. On a lightly floured surface, roll one half of the pastry dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry even with rim. Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Bake 15 minutes.
- 3. Reduce oven setting to 350°. Bake 40-50 minutes longer or until crust is golden brown and filling is bubbly. Cool on a wire rack. Yield: 8 servings.

Something a little Personal....

One year anniversary of the tornado that spun through Nehawka.
It was amazing... scary... distructive... and left one man clinging for his life.
The tornado formed and fell from the sky on the corner of Anderson Dr. and 54th Street.
It then traveled West right into our back yard/woods. It danced back and forth heading right at our house to bouncing back to Havelock Ave. where it had our dear friend and neighbor Robin Stoll pinned to a tree holding on for his life as it distroyed his home. The tornado shifted again and started toward our local winery 'Slattery Vintage Estates' then drifting off past the town of Weeping Water and toward Manley before I really couldnt see it anymore.

NEHAWKA, Neb. (WOWT) - A man in Nehawka, Nebraska owes his life to a tree. Last May, Robin Stoll held onto it for dear life as a tornado tried to sweep him away.

"I don't remember much except the wind was blowing hard." Stoll survived the tornado that tore through the countryside and destroyed his farm near the town of Nehawka. "I didn't figure it was gonna get me. I didn't think my time was up yet."
The 77-year-old was outside when he saw the storm barrel in and clung to an old tree to stay alive. "It picked me up and threw me against the tree and I just held on."
Six months later, Stoll is thankful. He lost a lot to the tornado, but that old tree is still standing. He calls it his lifesaver. "We're gonna leave it. I might need it again."
It's fitting that a tough farmer like Stoll would also have a tough tree. The tornado claimed most of its branches, but its roots are solid. So are Stoll's. He's lived on this farm his entire life and just like this old tree held its ground, Stoll is holding his by rebuilding the farm. He has just one wish for the coming year. "Nothing goes wrong," he laughs.
