Merry Christmas!!!
Can you think of a special person in your life who helped shape you? Someone who believed in you, and helped you to see the awesome person you are? That person was a mentor. Be that special person to a student at Conestoga. The Conestoga TeamMates Mentoring program is looking for caring, adult mentors who can meet with a student for one hour a week at school. A mentor training and informational session will be held at the Conestoga Elementary School cafeteria on Tuesday, September 26 from 6-8pm. Anyone interested in TeamMates is welcome to attend. Recipe of the week...
Garlic Roased Potatoes Recipe
Ingredients:
1 lb baby potatoes, washed and rinsed
2 tablespoons salted butter, melted
2 tablespoons olive oil
4 cloves garlic, finely minced
Pinch of salt
Pinch of cayenne pepper
3 dashes ground black pepper
Chopped parsley, for garnishing
Method:
Preheat the oven to 400F.
Place each potato on a wooden spoon and cut horizontal slits on the potatoes. In a small bowl, combine the butter, olive oil, garlic, salt, cayenne pepper and black pepper together. Stir to combine well. Toss the potatoes with the garlic mixture, coat well. Make sure the garlic mixture gets inside the slits of the potatoes. Transfer the potatoes to a roasting pan.
Roast the potatoes for 20 minutes, then turn them over and baste with the garlic oil. Roast for another 20 minutes. Remove from heat, garnish with parsley and serve immediately.
